This looks way more impressive than it is, and is a favorite to make for house guests and lazy Saturdays. Can be made healthy with egg substitute and milk in lieu of cream.
1/8 C. Heavy Whipping Cream
1 TBS Unsalted Butter
1/2 Onion, Minced
1/2 Bell Pepper, Minced
1 Clove Garlic, Minced
2 oz. Lunch Meat Ham, Roughly Diced
1/2 C. Cheddar Cheese, Shredded
2 tsp Salt
1 tsp Pepper
- Preheat oven to 350 degrees, spray glass pie pan with pam.
- Melt butter over medium heat in sauce pan. Add veggies, sautéing until onions become soft and transparent. Set aside.
- Whisk together eggs, cream, salt, and pepper. Add cheese, then veggies.
- Pour into prepared pie plate, and bake for 30 minutes, or until top begins to slightly brown and becomes firm.
Slice as you would a pie, and plate it. Serve with salsa, Tabasco, or just a side of toast!
