Easy Ham & Cheese Frittata

This looks way more impressive than it is, and is a favorite to make for house guests and lazy Saturdays. Can be made healthy with egg substitute and milk in lieu of cream.

Ingredients:

4 Eggs

1/8 C. Heavy Whipping Cream

1 TBS Unsalted Butter

1/2 Onion, Minced

1/2 Bell Pepper, Minced

1 Clove Garlic, Minced

2 oz. Lunch Meat Ham, Roughly Diced

1/2 C. Cheddar Cheese, Shredded

2 tsp Salt

1 tsp Pepper

Preparation:

  1. Preheat oven to 350 degrees, spray glass pie pan with pam.
  2. Melt butter over medium heat in sauce pan. Add veggies, sautéing until onions become soft and transparent. Set aside.
  3. Whisk together eggs, cream, salt, and pepper. Add cheese, then veggies.
  4. Pour into prepared pie plate, and bake for 30 minutes, or until top begins to slightly brown and becomes firm.

Slice as you would a pie, and plate it. Serve with salsa, Tabasco, or just a side of toast!
