BPJ’s Bison & Beer Chili

  • 2 lbs Ground Bison
  • 1 Medium Onion, Diced
  • 1/2 Jalapeño, Minced
  • 3/4 Bottle of Shiner Bock Beer
  • 12 oz Tomato Sauce
  • 2 TBS Tomato Paste
  • 15 oz Ranch Style Beans
  • 1 tsp Paprika
  • 1 TBS Salt, or To Taste
  • 2 tsp Pepper, or To Taste
  • 1/4 Cup Chili Powder, or To Taste
  • 1 tsp Cumin, or To Taste
  • 1 tsp Garlic Powder, or To Taste


  1. In a dutch oven or large skillet, add ground bison, onion, and jalapeño over medium-high heat. Cook until meat is brown and onion becomes transparent. Drain grease.
  2. Add beer, tomato sauce, tomato paste, and beans to mixture. Mix well.
  3. Stir in remaining ingredients, and bring to a boil.
  4. Allow chili to boil for approximately 2 – 4 minutes. Reduce heat to medium, and allow chili to simmer for minimum of 30 minutes.

Garnish with shredded cheddar cheese, diced green onions, and cornbread or saltine crackers.
